entire nation prepares the same dish: turkey.
This is the only occasion we will have to propose preparations worthy of the
name for this courtyard fowl with its spongy and almost tasteless meat. In
addition, the turkey is inevitably too large for today's smaller families.
In fact, if you happen to be in New York just before this holiday, you will,
in all probability, be invited to lunch by everyone, including the taxi driver
and the disco dancer.
So, long live the turkey; may he long enjoy his one day of glory a year, and
it is in his memory (in every sense of the word) that these recipes are dedicated!
