continue … but that should suffice, for should we go any further, we might indeed be tempted to become vegetarian.
Italian cuisine is pure heaven for the vegetarian because, more than any other national cuisine , it provides an infinity of meatless recipes. The Mediterranean Diet, in fact, with the exception of the odd little fish, includes very little meat and was traditionally the staple diet in southern Italy until just a few decades ago. Consider pizza, the masterpiece of minimalist cuisine as well as an homage to the sun and the simplest products of that region. Could it reasonably be labeled a vegetarian dish? (And yet it is.)
When food becomes art, it transcends the culinary sphere; consequently, in Italy the cuisine is not vegetarian, but simply Italian, even when it excludes meat. An excellent cuisine, the most remarkable dishes of which would be acceptable to the most fanatical of vegetarians.
This section of the site is therefore addressed to all those who would make their meals an adventure, who see the miracle of the Italian table for what it is; a brilliant synthesis of simplicity and taste.
